Makenzi Mollitor is a Registered Dietitian Nutritionist and holistic plant-based chef. A career in the food industry has always been in the cards for her. When she was younger, her family would laugh when she’d step off the school bus as a kindergartener and demand “real food” as her after school snack. She didn’t want sugary Oreos or cheesy Goldfish like the average five year old. She wanted “real food” which meant a trip to a gourmet deli in her neighborhood for stuffed peppers, freshly made spinach salads topped with nuts and pomegranate seeds, and homemade soups. Later in elementary school, she attended cooking classes for juniors where she would prepare dishes that ranged from homemade gnocchi pomodoro to decadent chocolate lava cake with a coconut sorbet. Fast-forward about fifteen years, and it is no coincidence that Makenzi is passionate about food – more specifically, good quality food that nourishes the body.
She is now referred to as a “foodie” and being a “foodie” definitely runs in her family. Makenzi’s dad earned his Bachelor’s Degree in hospitality and is now a country club manager. Her uncle went to culinary school in Paris and is now a chef on Long Island. Obviously, Makenzi has been exposed to good food ever since she was very young.
As an undergraduate, Makenzi majored in Health Sciences at Quinnipiac University. It was there that she was first introduced to nutrition courses. After graduating from Quinnipiac in May of 2019, she further pursued her passion and received her second Bachelor’s Degree in nutrition at Long Island University. Makenzi continued her nutrition studies under LIU’s dietetic internship where she completed 1,200 supervised hours. She graduated in June of 2021 and passed her board exam to officially become registered as a dietitian in September of 2021. Her nutrition education didn’t stop there though. In the fall of 2021, Makenzi enrolled at the Institute of Integrative Nutrition (IIN) to become certified as a Holistic Health Coach and further understand the power of using food as medicine.
A year into her nutrition studies, Makenzi transitioned to a plant-based diet, specifically one that enhances and optimizes digestion by focusing on the principles of food combining. She found immense healing and improvement in her relationship with food by appreciating the abundance plants have to offer.
