I think I could fool my meat eaters with this one! It’s crazy how identical in taste, appearance and texture shredded jackfruit is to pulled pork (and adding some of your favorite bbq sauce definitely helps)! As usual, this recipe is vegan and gluten-free.
Ingredients
1-20 oz can green jackfruit-shredded
1/3 cup bbq sauce-I use primal kitchen
¼ tsp paprika
1-10 oz bag cole slaw
1 red bell pepper-thinly sliced
4 tbsp extra-virgin olive oil
3 tbsp apple cider vinegar
1 tsp honey
Juice from ½ lemon
½ tsp Dijon mustard
Salt & pepper to taste
1-16 oz can fat free refried beans-I use Trader Joe’s
6 gluten-free tortillas-I use Trader Joe’s almond flour tortillas or Siete tortillas
Crushed plantain chips and fresh cilantro for garnish
Directions
1. Add shredded jackfruit, bbq sauce and paprika to a large pan over medium heat, stir to combine and cook for 8-10 minutes
2. Add cole slaw and red bell pepper to a medium sized bowl
3. Add olive oil, apple cider vinegar, honey, lemon juice, dijon mustard and salt & pepper to a small bowl and whisk together until evenly combined
4. Add dressing to cole slaw and bell pepper and toss to combine
5. Heat refried beans in microwave for about 2 minutes and tortillas on stove top over medium heat until golden brown on each side (watch closely)
6. To plate, top tortilla with a smear of refried beans, cole slaw mixture, bbq pulled jackfruit and top with crushed plantain chips, fresh cilantro & enjoy!
