This is the perfect salad to make for lunch as we transition into the warmer months. With inspiration from the mediterranean diet, this salad is loaded with healthy fats, plant protein, a nice crunch, and a lot of color, which means it’s loaded with nutrients!
Ingredients
1 head organic romaine lettuce-chopped
1/3 cup shaved fennel
4 radish-thinly sliced
½ roasted red pepper-thinly sliced
2 tbsp pickled red onion
¼ cup kalamta olives
1-2 tbsp hummus
for the dressing
1 tbsp tahini
1 tbsp extra-virgin olive oil
3 tbsp red wine vinegar
Salt & pepper
Dash of oregano
Directions
1. Add dressing ingredients to a small bowl and whisk until combined
2. Add lettuce and vegetables to a large salad bowl
3. Add dressing and toss to combine
4. Top with kalamata olives and a scoop of your favorite hummus & enjoy!
