Broccoli Cheddar Grilled Cheese

          I don’t eat dairy free cheese often. I believe that if you are having a strong craving for meat or dairy, consuming high quality animal products is sometimes better than the overly processed alternatives that are on the market today. However, I personally love the brand Violife. Their dairy free cheeses taste pretty close to the real deal and have pretty minimal/simple ingredients, so I approve this one. I had bought a pack of their cheddar cheese slices to use on my black bean and forbidden rice burgers (recipe in my last post) and was thinking of what else I could use it for. I present to you…the most delicious and nutrient dense dairy free grilled cheese you’ll ever have in your life! I love this recipe too because it is easily customizable to ingredients you have on hand. If you feel your body tolerates dairy, have the real deal. If you only have broccoli or don’t like sauerkraut, that’s fine. However you choose to level up this grilled cheese, I know you’ll enjoy it!

 

Ingredients

2 slices sourdough bread

3 slices cheddar cheese-I used the dairy free brand Violife

1 cup broccoli florets-roughly chopped & steamed

1/3 cup artichoke hearts-halved (optional)

¼ cup sauerkraut (optional)

avocado or olive oil for brushing toast

Directions

1. Steam broccoli

2. In the meantime, lightly toast bread in toaster

3. Lightly brush toasted bread with desired oil and add to medium sized pan over low to medium heat

4. Evenly distribute cheese onto both slices of bread, cover and let cheese melt for 5-7 minutes

5. Add steamed broccoli onto one slice of bread and artichoke hearts & sauerkraut onto other half. Fold to form sandwich

6. Cook for about 2-3 minutes on each side or until desired crispness & enjoy!
