This has been my absolute favorite and go-to breakfast this Fall/Winter. If you have ever had the Trader Joe’s overnight oats or the brand Mush, then you understand the hype over the cream texture and delicious flavor. I knew just from looking at the ingredient label that I could create my own and I think I cracked the code.
Ingredients
½ cup rolled oats-divided
¾ cup plant-based milk-divided (I use coconut milk)
2 pitted medjool dates
1 tsp cinnamon
½ tsp vanilla extract
banana slices and sunbutter for topping
Directions
1. Add ¼ cup oats, ½ cup milk, dates, cinnamon and vanilla to a high speed blender and blend until smooth & evenly combined
2. Add oat mixture to a small bowl or mason jar and mix in the remaining ¼ cup oats and ¼ cup plant-based milk. Stir to combine
3. Store in the fridge overnight and enjoy in the morning with sliced banana & a big scoop of sunbutter!
