This pumpkin bread is made with whole-food, gluten-free ingredients and is 100% vegan and refined sugar free…let me just say it is quite delicious! If you have my cookbook, I have a similar recipe in there that has a more dense/fudgy texture. If you are looking for a bread with the perfect soft/cakey/moist consistency, the recipe below is for you!
Ingredients
1 cup pumpkin puree
½ cup maple syrup
1/3 cup melted coconut oil (plus more for coating pan)
1 tsp vanilla extract
2 cups oat flour
1 cup almond flour
1 tbsp ground cinnamon
½ tsp pumpkin pie spice
1 tsp baking soda
1 tsp baking powder
½ tsp salt
½ cup vegan chocolate chips-optional (I like baking with the brand Enjoy Life)
Crushed pecans for topping-optional
Directions
1. Preheat oven to 350 degrees
2. In a medium sized bowl, mix pumpkin puree, maple syrup, coconut oil & vanilla extract until evenly combined
3. In a separate large bowl, whisk together dry ingredients
4. Add wet ingredients to dry and mix together until smooth and evenly combined
5. Fold in chocolate chips
6. Coat a 9×5” loaf pan with coconut oil and pour in batter
7. Bake for 40 minutes or until center is tested and comes out clean
Enjoy with a cup of coffee in the morning or glass of milk for an after dinner treat!
