Apple Cider Donuts are definitely a fall favorite over here. Although I will admit that nothing compares to the ones you get while pumpkin picking, these are pretty damn good too. Plus, these are vegan, gluten free & refined sugar free!
Ingredients
Donuts
1 ½ cups 1:1 gluten free baking flour
½ cup coconut sugar
1 tsp ground cinnamon
1 ½ tsp baking soda
½ tsp salt
½ cup apple cider
¼ cup plant-based milk
3 tbsp unsweetened applesauce
2 tbsp melted coconut oil
Cinnamon Sugar Topping
1/3 cup coconut sugar
2 tsp ground cinnamon
2 tbsp melted coconut oil
Directions
1. Preheat oven to 350 degrees and spray two donut pans with non stick spray (I used olive oil spray)
2. Add flour, coconut sugar, cinnamon, baking soda & salt to a large bowl and whisk together to combine
3. Add wet ingredients (apple cider, plant-based milk, apple sauce and melted coconut oil) to dry ingredients and mix well to combine
4. Spoon batter into donut pan, filling about ¾ of the way full (can also use a piping bag to pipe in)
5. Bake for 8-10 minutes or until edges are golden brown
6. While donuts are baking, add coconut sugar & ground cinnamon to a small bowl and mix together until evenly combined. Once combined, add mixture to a plate
7. Cool donuts on a cooling rack for about 2 minutes before removing from pan
8. Invert donuts onto cooling rack and melt 2 tbsp of coconut oil for brushing
9. Brush donuts with coconut oil, then place face down onto cinnamon sugar topping to coat. Repeat this step for all donuts
