S’mores Cookie Bars

Okay these are…CRACK and also the perfect treat to transition from Summer to Fall

WARNING…try not to eat the whole pan when they come out of the oven

Ingredients

1 flax egg (1 tbsp flaxmeal to 3 tbsp water)

1/3 cup tahini

1/3 cup coconut sugar

1 tsp vanilla extract

3 tbsp plant-based milk

1 cup almond flour

¼ cup coconut flour

1 tsp baking powder

1 tsp cinnamon

¼ tsp sea salt

1 cup vegan dark chocolate chips-I use the brand Enjoy Life

1 cup vegan marshmallows- I use the brand Dandies

 

Directions

1. Preheat oven to 375 degrees; add parchment paper to 8×8 baking dish

2. Add wet ingredients, along with coconut sugar to a medium sized bowl & whisk together until evenly combined

3. Add dry ingredients to a large bowl and whisk to combine

4. Add wet ingredients to dry ingredients and mix together until evenly combined

5. Use your hands to press prepared graham cracker cookie layer evenly into dish

6. Evenly distribute chocolate chips on top of cookie layer

7. Add marshmallows and bake at 375 for 25 minutes

8. Raise temperature to 400 degrees and bake for another 5 minutes or until marshmallows are golden brown
