I’ve been wanting to test this recipe for about two Summers now and just never got to it (not sure why). But they are finally here and what better time than labor day weekend to enjoy one last summer flavored treat! I haven’t tried for myself, but I have a feeling these would be fun & yum with a 2 oz shot of rum added to the mixture. If you try, please let me know how they turn out!
Ingredients
1-13.5 oz can full fat coconut milk
Juice from 2 limes
3 tbsp agave or pure honey
Zest from 4 limes
Crack of pink himalayan sea salt
Sprinkle of cinnamon
Directions
1. Place can of coconut milk in fridge to chill overnight to help solidify mixture
2. About 24 hours later, add refrigerated coconut milk to a high speed blender and blend on high for 1 minute until evenly combined & milk consistency forms
3. Add remaining ingredients and blend for another 10 seconds
4. Evenly distribute mixture into popsicle trays without sticks and freeze for 20 minutes (mixture yields about 8 popsicles)
5. Remove popsicles from freezer and insert popsicle sticks (if mixture has separated, use stick to stir together before placing back in the freezer)
6. Freeze for 4-5 hours or until completely solid
