Carrot Ginger Dressing

My take on that mouthwatering dressing you get at a Japanese restaurant…you know the one you pretty much want to drink because it’s so good. This dressing is delicious over a mixed greens & romaine salad with shredded carrots, radish & cucumber. It’s also the perfect accompaniment to my Crispy Rice with Spicy Avocado recipe! 

Ingredients

1 medium carrot-peeled 

1/4 yellow onion

1 inch fresh ginger

4 tbsp extra-virgin olive oil

2 tbsp coconut aminos 

2 tbsp rice vinegar

1 tbsp toasted sesame oil

1 1/2 tsp maple syrup

1/4 cup distilled water

Directions

1.Add all ingredients to a high speed blender and blend until smooth and evenly combined

2.Serve over that mixed greens salad I mentioned earlier & enjoy! 

Yields ~1 cup dressing
