Crispy Rice with Spicy Avocado

Eating “healthy” doesn’t mean you have to miss out on good food with lots of flavor and this recipe is proof of just that! The crispy rice is the star of the show, but paired with my spicy avocado mash and we have a match made in heaven. Try it out and see for yourself! Oh, and it’s super easy to make even if it does look like it came right from the kitchen of Nobu.

Ingredients

Crispy Rice

1 cup white jasmine rice

4 tbsp avocado oil

Spicy Avocado

1 ripe avocado

1 tbsp coconut aminos

1 tsp toasted sesame oil

1 tsp sriracha

2 tbsp fresh scallion

Pink Himalayan salt to taste

3 small radish and 1 jalapeño-sliced, for garnish

Directions

1. In a medium sized pot, cook rice according to directions on package

2. Slice about 3 small radish and 1 jalapeño and set aside

3. Add spicy avocado ingredients to a small bowl and mash together until evenly combined and of desired consistency

4. Once rice is done cooking, set aside to cool for about 15-20 minutes

5. Add avocado oil to a large frying pan over medium-high heat

6. Scoop out about 2 tbsp worth of rice at a time and form into a log shape (continue until you have used up all the rice; should yield about 10 pieces)

7. Add formed rice to frying pan and cook for about 5-6 minutes on each side or until crispy & golden brown

8. Remove crispy rice from pan and add a scoop of spicy avocado on top of each

9. Top crispy rice with sliced radish & jalapeño, dunk in soy sauce and enjoy this tasty nutritious treat!

Yields ~10 pieces
